A nourishing vegetarian curry made with protein-rich chickpeas simmered in a mildly spiced spinach gravy—perfect for a balanced, healthy meal.

Ingredients

  • 1½ cups cooked chickpeas (boiled or canned, drained)

  • 2 cups spinach leaves (palak)

  • 2 tbsp oil

  • 1 onion (finely chopped)

  • 1 tsp ginger-garlic paste

  • 2 tomatoes (pureed)

  • ½ tsp cumin seeds

  • ¼ tsp turmeric powder

  • 1 tsp coriander powder

  • ½ tsp garam masala

  • Salt to taste

  • 1 cup water

  • Fresh coriander leaves (for garnish)

Directions

  • Prepare Spinach: Blanch spinach in hot water for 2 minutes, transfer to cold water, then blend into a smooth puree.
  • Make Base: Heat oil in a pan. Add cumin seeds and let them splutter.
  • Sauté Aromatics: Add onion and sauté until golden. Add ginger-garlic paste and cook till fragrant.
  • Add Tomatoes & Spices: Add tomato puree, turmeric, coriander powder, and salt. Cook until oil separates.
  • Add Spinach & Chickpeas: Add spinach puree and chickpeas. Mix well.
  • Simmer: Add water and simmer for 10–12 minutes.
  • Finish & Serve: Add garam masala, garnish with coriander, and serve hot.

Notes

  • Protein Boost Tips:
    1. Serve with brown rice or millet roti
    2. Add tofu cubes for extra protein
    3. Skip cream to keep it light and healthy
