Ingredients
1 cup quinoa
2 cups water
1 tsp olive oil
1 clove garlic (finely chopped)
½ cup broccoli florets
½ cup bell peppers (sliced)
¼ cup carrot (julienned)
¼ cup zucchini (sliced)
Salt to taste
½ tsp black pepper
1 tsp lemon juice
Fresh parsley or coriander (for garnish)
Directions
- Cook Quinoa: Rinse quinoa well. Cook with water until grains are fluffy and water is absorbed. Set aside.
- Sauté Vegetables: Heat olive oil in a pan. Add garlic and sauté briefly.
- Add Veggies: Add broccoli, bell peppers, carrot, and zucchini. Stir-fry on high flame for 4–5 minutes.
- Combine: Add cooked quinoa to the pan and mix gently.
- Season: Add salt, black pepper, and lemon juice. Toss well.
- Finish & Serve: Garnish with fresh herbs and serve warm.
