Ingredients
1 cup semolina (rava/sooji)
½ cup curd
½ cup water (adjust as needed)
¼ cup carrot (finely chopped)
2 tbsp onion (finely chopped)
1 tbsp capsicum (finely chopped)
1 green chilli (finely chopped, optional)
½ tsp mustard seeds
1 tsp oil
Curry leaves (chopped)
Salt to taste
¼ tsp baking soda or fruit salt (eno)
Oil for greasing
Directions
- Prepare Batter: In a bowl, mix rava, curd, water, and salt to make a thick batter. Rest for 5–7 minutes.
- Add Vegetables: Mix in carrot, onion, capsicum, green chilli, and curry leaves.
- Prepare Tempering: Heat 1 tsp oil, add mustard seeds. Once they splutter, add to the batter.
- Activate Batter: Add baking soda or eno just before cooking and mix gently.
- Cook Appe: Heat appe pan and grease each cavity lightly. Pour batter into cavities, cover, and cook on low flame.
- Flip & Cook: Turn appe and cook until golden on all sides.
- Serve Hot: Serve with coconut chutney or tomato ketchup.
