Ingredients
½ cup red lentils
¾ cup coconut milk
1 onion
1 tomato
1 tsp curry powder
½ tsp turmeric
Salt as needed
1 tbsp olive oil
Directions
- Wash lentils and boil with turmeric.
- Sauté onions and tomatoes in oil.
- Add spices and cooked lentils.
- Pour coconut milk and simmer for 5 mins.
- Serve warm.
