Ingredients
1 cup chopped vegetables (carrot, beans, potato)
1 onion (sliced)
1 cup thin coconut milk + 1/2 cup thick coconut milk
1/2 tsp pepper, 2 green chillies
Curry leaves, coconut oil
Directions
- Sauté onions, green chillies, and curry leaves.
- Add veggies and thin coconut milk. Cook until soft.
- Add thick coconut milk and pepper. Simmer gently.
- Drizzle with coconut oil. Serve hot.
