A light and flavorful vegan stir with sweet corn, fresh spinach, and a hint of coconut—simple, vibrant, and nutritious.

Ingredients

  • 1 cup sweet corn (boiled)

  • 2 cups spinach (chopped)

  • 1 tsp coconut oil (or regular oil)

  • 1 tsp garlic (minced)

  • 2 tbsp grated coconut

  • ¼ tsp cumin powder

  • Salt to taste

  • ¼ tsp black pepper

  • 1 tbsp water

Directions

  • Heat Oil: Heat oil in a pan and sauté garlic.
  • Add Corn: Add boiled corn and cook for 2–3 minutes.
  • Add Spinach: Add spinach and cook until wilted.
  • Season & Finish: Add salt, pepper, cumin, and grated coconut. Mix well.
  • Serve: Cook for another 1–2 minutes and serve warm.
