Colorful bell peppers filled with fluffy couscous, herbs, and veggies—baked to perfection for a wholesome vegan meal.

Ingredients

  • 2 large bell peppers (halved & deseeded)

  • 1 cup cooked couscous

  • ½ cup mixed vegetables (carrot, corn, peas)

  • 1 tsp olive oil

  • 1 tsp garlic (minced)

  • ½ tsp dried oregano

  • Salt to taste

  • Black pepper to taste

  • 1 tbsp lemon juice

  • Fresh parsley (for garnish)

Directions

  • Preheat Oven: Preheat to 180°C (350°F).
  • Prepare Filling: Heat oil in a pan, sauté garlic and veggies. Add couscous, oregano, salt, and pepper.
  • Stuff Peppers: Fill bell pepper halves with the couscous mixture.
  • Bake: Place in a tray and bake for 15–20 minutes until peppers are tender.
  • Serve: Drizzle lemon juice, garnish, and serve warm.
