A crunchy and flavorful vegan stir made with fresh cucumbers coated in a spicy peanut glaze—light, refreshing, and satisfying.

Ingredients

  • 2 cups cucumber (thick sliced)

  • 1 cup steamed peanuts

  • 1 tsp sesame or olive oil

  • 1 tbsp peanut butter

  • 1 tsp soy sauce

  • ¼ tsp chilli flakes

  • 2 tbsp water

  • ½ tsp grated ginger

  • Spring onions (for garnish)

Directions

  • Heat Oil: Heat oil in a pan and add ginger.
  • Add Cucumber: Toss cucumber slices, peanuts and stir for 2–3 minutes.
  • Make Sauce: Mix peanut butter, soy sauce, chilli flakes, and water.
  • Combine: Pour sauce into the pan and toss well.
  • Serve: Garnish with spring onions and serve warm or slightly cool.
