Ingredients
2 cups cucumber (thick sliced)
1 cup steamed peanuts
1 tsp sesame or olive oil
1 tbsp peanut butter
1 tsp soy sauce
¼ tsp chilli flakes
2 tbsp water
½ tsp grated ginger
Spring onions (for garnish)
Directions
- Heat Oil: Heat oil in a pan and add ginger.
- Add Cucumber: Toss cucumber slices, peanuts and stir for 2–3 minutes.
- Make Sauce: Mix peanut butter, soy sauce, chilli flakes, and water.
- Combine: Pour sauce into the pan and toss well.
- Serve: Garnish with spring onions and serve warm or slightly cool.
