Ingredients
1 medium zucchini (sliced)
¾ cup cooked chickpeas
1 tsp olive oil
1 clove garlic (minced)
½ tsp dried oregano
¼ tsp black pepper
Salt to taste
Lemon juice (optional)
Fresh parsley (for garnish)
Directions
- Heat Oil: Heat olive oil in a pan. Add garlic and sauté briefly.
- Add Zucchini: Add zucchini slices and sauté for 4–5 minutes until tender.
- Add Chickpeas: Add chickpeas, oregano, pepper, and salt. Toss gently.
- Stir-Fry: Cook for 4–5 minutes until lightly golden.
- Finish & Serve: Add a squeeze of lemon, garnish with parsley, and serve warm.
