Light and creamy coconut milk-based stew with mixed vegetables. A South Indian vegan comfort dish.

Ingredients

  • 1 cup chopped vegetables (carrot, beans, potato)

  • 1 onion (sliced)

  • 1 cup thin coconut milk + 1/2 cup thick coconut milk

  • 1/2 tsp pepper, 2 green chillies

  • Curry leaves, coconut oil

Directions

  • Sauté onions, green chillies, and curry leaves.
  • Add veggies and thin coconut milk. Cook until soft.
  • Add thick coconut milk and pepper. Simmer gently.
  • Drizzle with coconut oil. Serve hot.
