Fragrant basmati rice cooked with colourful vegetables and mild spices – a quick and wholesome Indian one-pot meal.

Ingredients

  • 1 cup basmati rice (soaked for 20 mins)

  • 1 tbsp oil or ghee

  • 1 bay leaf, 2 cloves, 1 small cinnamon stick

  • 1 tsp cumin seeds

  • 1 onion (sliced)

  • 1 tsp ginger garlic paste

  • 1 cup mixed vegetables (carrot, beans, peas)

  • 2 cups water

  • Salt to taste

  • Coriander leaves for garnish

Directions

  • Heat oil, add whole spices and cumin.
  • Sauté onions until golden, then add ginger garlic paste.
  • Add chopped vegetables and sauté 3–4 mins.
  • Add soaked rice, water, and salt. Bring to a boil.
  • Cover and simmer until rice is cooked and fluffy.
  • Garnish and serve hot.
