A healthy breakfast twist on traditional upma made with oats and mixed vegetables—filling, heart-friendly, and perfect for busy mornings.

Ingredients

  • 1 cup rolled oats

  • 1 tbsp oil

  • ½ tsp mustard seeds

  • ½ tsp cumin seeds

  • 8–10 curry leaves

  • 1 small onion (finely chopped)

  • 1 green chilli (finely chopped, optional)

  • ¼ cup carrot (finely chopped)

  • ¼ cup green peas

  • ¼ cup beans (chopped)

  • ¼ tsp turmeric powder

  • Salt to taste

  • 2 cups water

  • Fresh coriander leaves (for garnish)

  • Lemon juice (optional)

Directions

  • Dry Roast Oats: Dry roast oats on low flame until aromatic. Remove and set aside.
  • Prepare Tempering: Heat oil in a pan. Add mustard seeds, cumin seeds, and curry leaves.
  • Sauté Vegetables: Add onion and green chilli. Sauté until soft. Add vegetables, turmeric, and salt. Cook for 2–3 minutes.
  • Cook Upma: Add water and bring to a boil. Add roasted oats and mix well.
  • Simmer: Cook on low flame, stirring occasionally, until oats absorb water.
  • Serve: Garnish with coriander and a squeeze of lemon. Serve hot.
