Ingredients
1 cup boiled chickpeas
1 cup mixed veggies
1 cup coconut milk
1 tomato chopped
1 onion chopped
1 tsp cumin
1 tsp paprika
½ tsp turmeric
Salt & olive oil
Directions
- Sauté onions & cumin.
- Add tomato and cook until soft.
- Add veggies, turmeric & paprika.
- Add chickpeas and coconut milk.
- Simmer 10 minutes.
- Serve with quinoa or rice.
