A wholesome, balanced bowl with quinoa, chickpeas, veggies, and a tangy lemon dressing.

Ingredients

  • 1 cup cooked quinoa

  • 1 cup boiled chickpeas

  • 1 small cucumber (diced)

  • 1 tomato (diced)

  • ½ cup sweet corn

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt & pepper to taste

  • Fresh parsley or coriander

Directions

  • Add quinoa, chickpeas, cucumber, tomato, and corn to a bowl.
  • Mix lemon juice, olive oil, salt & pepper.
  • Pour dressing over the bowl.
  • Toss well and garnish with parsley.
