Ingredients
1 cup cooked quinoa
1 cup boiled chickpeas
1 small cucumber (diced)
1 tomato (diced)
½ cup sweet corn
1 tbsp olive oil
1 tbsp lemon juice
Salt & pepper to taste
Fresh parsley or coriander
Directions
- Add quinoa, chickpeas, cucumber, tomato, and corn to a bowl.
- Mix lemon juice, olive oil, salt & pepper.
- Pour dressing over the bowl.
- Toss well and garnish with parsley.
