A wholesome, mildly spiced stir-fried dish made with sweet potatoes and crunchy peanuts—nutritious, comforting, and perfect for a balanced meal.

Ingredients

  • 2 medium sweet potatoes (cubed)

  • ¼ cup roasted peanuts

  • 2 tbsp oil

  • ½ tsp mustard seeds

  • ½ tsp cumin seeds

  • 1 small onion (finely chopped)

  • 1 green chilli (finely chopped, optional)

  • ¼ tsp turmeric powder

  • ½ tsp red chilli powder

  • Salt to taste

  • Curry leaves (optional)

  • Fresh coriander (for garnish)

  • Lemon juice (optional)

Directions

  • Cook Sweet Potatoes: Boil or steam sweet potato cubes until just tender. Drain and set aside.
  • Prepare Tempering: Heat oil in a pan. Add mustard seeds, cumin seeds, and curry leaves.
  • Sauté Base: Add onion and green chilli. Sauté until soft.
  • Add Spices: Add turmeric, red chilli powder, and salt. Mix well.
  • Combine: Add cooked sweet potatoes and peanuts. Toss gently.
  • Stir-Fry: Cook on medium flame for 5–7 minutes until lightly crisp.
  • Finish & Serve: Garnish with coriander and a squeeze of lemon.
