Ingredients
2 large bell peppers (halved & deseeded)
1 cup cooked couscous
½ cup mixed vegetables (carrot, corn, peas)
1 tsp olive oil
1 tsp garlic (minced)
½ tsp dried oregano
Salt to taste
Black pepper to taste
1 tbsp lemon juice
Fresh parsley (for garnish)
Directions
- Preheat Oven: Preheat to 180°C (350°F).
- Prepare Filling: Heat oil in a pan, sauté garlic and veggies. Add couscous, oregano, salt, and pepper.
- Stuff Peppers: Fill bell pepper halves with the couscous mixture.
- Bake: Place in a tray and bake for 15–20 minutes until peppers are tender.
- Serve: Drizzle lemon juice, garnish, and serve warm.
