Ingredients

  • 1½ cups eggplant (cubed)

  • 1 tsp olive oil

  • 1 tsp garlic (minced)

  • ½ tsp smoked paprika

  • ¼ tsp black pepper

  • Salt to taste

  • 2 tbsp water

  • Fresh parsley (for garnish)

Directions

  • Heat Oil: Heat oil in a pan. Add garlic and sauté lightly.
