A quick and nourishing vegan stir-fry made with colorful vegetables, sesame seeds, and fresh ginger—perfect for light lunches or dinners.

Ingredients

  • 1 cup carrots (thinly sliced)

  • ½ cup beans (chopped)

  • ½ cup bell peppers (sliced)

  • 1 tsp sesame oil

  • 1 tsp white sesame seeds

  • 1 tsp fresh ginger (finely grated)

  • 1 tbsp soy sauce (or tamari)

  • ¼ tsp crushed black pepper

  • Salt (if needed)

  • Spring onions (for garnish)

Directions

  • Toast Sesame: Heat sesame oil in a pan. Add sesame seeds and let them crackle.
  • Aromatics: Add grated ginger and sauté for a few seconds.
  • Veggies: Add carrots, beans, and bell peppers. Stir-fry on high heat for 5–6 minutes.
  • Season: Add soy sauce and black pepper. Toss well.
  • Serve: Garnish with spring onions and serve hot.
