A light yet filling dish made with protein-rich quinoa tossed with colorful vegetables and minimal seasoning—perfect for a healthy lunch or dinner.

Ingredients

  • 1 cup quinoa

  • 2 cups water

  • 1 tsp olive oil

  • 1 clove garlic (finely chopped)

  • ½ cup broccoli florets

  • ½ cup bell peppers (sliced)

  • ¼ cup carrot (julienned)

  • ¼ cup zucchini (sliced)

  • Salt to taste

  • ½ tsp black pepper

  • 1 tsp lemon juice

  • Fresh parsley or coriander (for garnish)

Directions

  • Cook Quinoa: Rinse quinoa well. Cook with water until grains are fluffy and water is absorbed. Set aside.
  • Sauté Vegetables: Heat olive oil in a pan. Add garlic and sauté briefly.
  • Add Veggies: Add broccoli, bell peppers, carrot, and zucchini. Stir-fry on high flame for 4–5 minutes.
  • Combine: Add cooked quinoa to the pan and mix gently.
  • Season: Add salt, black pepper, and lemon juice. Toss well.
  • Finish & Serve: Garnish with fresh herbs and serve warm.
