A creamy, savory vegan noodle dish tossed with crunchy vegetables, ginger, and a rich peanut sauce—perfect for a quick comfort meal.

Ingredients

  • 120 g noodles (wheat or rice)

  • 1 tbsp peanut butter

  • 1 tsp soy sauce

  • ½ tsp grated ginger

  • 1 tsp oil

  • ½ cup carrots (julienned)

  • ½ cup cabbage (shredded)

  • 2 tbsp water

  • Chilli flakes (to taste)

  • Spring onions (for garnish)

Directions

  • Cook Noodles: Boil noodles as per pack instructions. Drain and set aside.
  • Make Sauce: Mix peanut butter, soy sauce, ginger, and water until smooth.
  • Stir-Fry Veggies: Heat oil in a pan. Add carrots and cabbage; sauté for 2–3 minutes.
  • Combine: Add noodles and sauce. Toss well.
  • Serve: Garnish with spring onions and chilli flakes.
