Paneer & Sprouts Stuffed Bell Peppers

Ingredients
3 large bell peppers (capsicum)
¾ cup paneer (crumbled)
½ cup mixed sprouts (boiled)
1 tbsp olive oil
1 small onion (finely chopped)
1 tsp ginger-garlic paste
½ tsp cumin powder
½ tsp black pepper
¼ tsp turmeric powder
Salt to taste
Fresh coriander leaves (chopped)
Directions
- Prepare Peppers: Cut the tops off bell peppers and remove seeds. Set aside.
- Make Filling: Heat oil in a pan. Sauté onion and ginger-garlic paste until soft.
- Add Protein Mix: Add paneer, sprouts, cumin powder, pepper, turmeric, and salt. Mix well and cook for 3–4 minutes.
- Stuff Peppers: Fill bell peppers with the prepared mixture.
- Cook: Arrange in a baking tray and bake at 180°C for 18–20 minutes (or shallow cook covered on a pan).
- Serve: Garnish with coriander and serve warm.
