Kashmiri-style mutton curry is rich in spices and yoghurt-based gravy.

Ingredients

  • 500g mutton

  • 1 cup yoghurt

  • 2 onions, sliced

  • 2 tsp Kashmiri chilli powder

  • 1 tsp fennel powder

  • 1 tsp ginger powder

  • 1 tsp turmeric

  • Whole spices (cloves, cardamom, cinnamon)

  • 4 tbsp oil/ghee

  • Salt to taste

Directions

  • Heat ghee/oil, fry onions & whole spices.
  • Add mutton, sear well.
  • Add yoghurt & spice powders.
  • Add water, cover & cook until tender.
  • Garnish with coriander, serve hot.
