Soft, melt-in-the-mouth ladoos made from tiny boondis soaked in sugar syrup and flavoured with cardamom – a festive favourite.

Ingredients

  • 2 cups besan (gram flour)

  • 2 cups sugar

  • 2 ½ cups water

  • Orange food colour (optional)

  • 4 tbsp ghee

  • 1 tsp cardamom powder

  • Chopped pistachios for garnish

Directions

  • Make a thin besan batter with water and food colour.
  • Heat the ghee in a pan and pour the batter through a perforated ladle to form tiny boondis.
  • Fry lightly, drain excess ghee.
  • Make a sugar syrup (1-string consistency) and add cardamom.
  • Mix boondis into syrup, rest 5 mins, then shape into ladoos.

Notes

  • Serving: Garnish with pistachios, serve during festivals like Diwali.
