A mildly spiced South Indian curry made with a medley of vegetables cooked in a creamy coconut-cashew gravy.

Ingredients

  • 1 cup mixed vegetables (carrot, beans, peas, potato)

  • 1 onion, 1 tomato

  • 1 tbsp ginger-garlic paste

  • 1/4 cup grated coconut, 5 cashews, 1 tsp fennel seeds

  • Spices: turmeric, chilli, garam masala, salt

Directions

  • Grind coconut, cashews, and fennel to a smooth paste.
  • Sauté onions and tomatoes, add masala and vegetables.
  • Add ground paste and water; simmer until vegetables are soft.
  • Garnish with coriander and serve with chapati or puri.
