Creamy, aromatic curry made with fresh fenugreek leaves and mushrooms simmered in a silky cashew cream sauce.

Ingredients

  • Mushrooms – 250g (sliced)

  • Fresh methi leaves – 1 cup (chopped)

  • Onion – 1 (chopped)

  • Tomato – 1 (pureed)

  • Green chilli – 1

  • Cashews – 10 (soaked)

  • Fresh cream – 2 tbsp

  • Milk – ½ cup

  • Cumin – 1 tsp

  • Ginger-garlic paste – 1 tsp

  • Turmeric – ¼ tsp

  • Coriander powder – 1 tsp

  • Garam masala – ½ tsp

  • Oil/ghee – 2 tbsp

  • Salt, pepper – to taste

Directions

  • Grind cashews with milk into a smooth paste.
  • Heat oil, add cumin, sauté onions & green chilli.
  • Add ginger-garlic paste, turmeric, tomato puree & spices.
  • Cook until the oil separates.
  • Add mushrooms & salt, sauté 4–5 mins.
  • Add chopped methi, cook till wilted.
  • Add cashew paste + cream, simmer 5 mins.
  • Finish with pepper & garam masala.
  • Serve hot with butter naan or jeera rice.
