kcalCreamy, aromatic curry made with fresh fenugreek leaves and mushrooms simmered in a silky cashew cream sauce.
Ingredients
Mushrooms – 250g (sliced)
Fresh methi leaves – 1 cup (chopped)
Onion – 1 (chopped)
Tomato – 1 (pureed)
Green chilli – 1
Cashews – 10 (soaked)
Fresh cream – 2 tbsp
Milk – ½ cup
Cumin – 1 tsp
Ginger-garlic paste – 1 tsp
Turmeric – ¼ tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Oil/ghee – 2 tbsp
Salt, pepper – to taste
Directions
- Grind cashews with milk into a smooth paste.
- Heat oil, add cumin, sauté onions & green chilli.
- Add ginger-garlic paste, turmeric, tomato puree & spices.
- Cook until the oil separates.
- Add mushrooms & salt, sauté 4–5 mins.
- Add chopped methi, cook till wilted.
- Add cashew paste + cream, simmer 5 mins.
- Finish with pepper & garam masala.
- Serve hot with butter naan or jeera rice.
