A protein-rich Indian-style omelette loaded with fresh vegetables and bold spices—perfect for a quick energizing breakfast.

Ingredients

  • 3 eggs

  • 1 onion (finely chopped)

  • 1 small tomato (finely chopped)

  • 1 green chili (finely chopped)

  • 2 tbsp chopped coriander leaves

  • ¼ tsp turmeric powder

  • ½ tsp black pepper powder

  • Salt to taste

  • 1 tbsp oil or butter

Directions

  • Crack eggs into a bowl and whisk well.
  • Add onions, tomato, green chili, coriander, turmeric, pepper, and salt.
  • Heat oil or butter in a pan on medium flame.
  • Pour egg mixture evenly into the pan.
  • Cook till the base is set and golden.
  • Flip and cook the other side till done.
  • Serve hot with toast or roti.
