A light and zesty vegan stir with tender potatoes and crisp green beans, finished with lemon and cracked pepper.

Ingredients

  • 1½ cups potatoes (cubed)

  • 1 cup green beans (chopped)

  • 1 tsp olive oil

  • 1 tsp garlic (minced)

  • ½ tsp crushed black pepper

  • Salt to taste

  • 1 tbsp lemon juice

  • 2 tbsp water

  • Fresh parsley or coriander (optional)

Directions

  • Parboil Potatoes: Boil potatoes for 5–6 minutes and drain.
  • Cook Beans: Heat oil in a pan, add garlic and green beans. Cook for 4–5 minutes.
  • Add Potatoes: Add potatoes, salt, and pepper.
  • Toss & Cook: Cook for 6–8 minutes until lightly crisp.
  • Finish: Add lemon juice, mix well, and serve warm.
