Ingredients
1½ cups potatoes (cubed)
1 cup green beans (chopped)
1 tsp olive oil
1 tsp garlic (minced)
½ tsp crushed black pepper
Salt to taste
1 tbsp lemon juice
2 tbsp water
Fresh parsley or coriander (optional)
Directions
- Parboil Potatoes: Boil potatoes for 5–6 minutes and drain.
- Cook Beans: Heat oil in a pan, add garlic and green beans. Cook for 4–5 minutes.
- Add Potatoes: Add potatoes, salt, and pepper.
- Toss & Cook: Cook for 6–8 minutes until lightly crisp.
- Finish: Add lemon juice, mix well, and serve warm.
