A bold and spicy North Indian vegetable curry made with freshly ground kadai masala and crunchy bell peppers.

Ingredients

  • 1 cup mixed vegetables (carrot, beans, peas)

  • 1 cup capsicum (cubed)

  • 2 onions (sliced)

  • 2 tomatoes (pureed)

  • 1 tbsp ginger-garlic paste

  • 2 tbsp oil

  • 1 tsp cumin seeds

  • 2 tsp kadai masala

  • ½ tsp turmeric powder

  • 1 tsp red chilli powder

  • Salt to taste

  • Fresh coriander for garnish

Directions

  • Heat oil in a pan and add cumin seeds.
  • Add onions and sauté till golden.
  • Add ginger-garlic paste and sauté well.
  • Add tomato puree, turmeric, chilli powder, and salt.
  • Cook until oil separates.
  • Add vegetables and capsicum with a little water.
  • Cover and cook till veggies are tender.
  • Add kadai masala, mix well, and simmer 5 minutes.
  • Garnish with coriander and serve hot.
