Ingredients
1½ cups cooked chickpeas (boiled or canned, drained)
2 cups spinach leaves (palak)
2 tbsp oil
1 onion (finely chopped)
1 tsp ginger-garlic paste
2 tomatoes (pureed)
½ tsp cumin seeds
¼ tsp turmeric powder
1 tsp coriander powder
½ tsp garam masala
Salt to taste
1 cup water
Fresh coriander leaves (for garnish)
Directions
- Prepare Spinach: Blanch spinach in hot water for 2 minutes, transfer to cold water, then blend into a smooth puree.
- Make Base: Heat oil in a pan. Add cumin seeds and let them splutter.
- Sauté Aromatics: Add onion and sauté until golden. Add ginger-garlic paste and cook till fragrant.
- Add Tomatoes & Spices: Add tomato puree, turmeric, coriander powder, and salt. Cook until oil separates.
- Add Spinach & Chickpeas: Add spinach puree and chickpeas. Mix well.
- Simmer: Add water and simmer for 10–12 minutes.
- Finish & Serve: Add garam masala, garnish with coriander, and serve hot.
