½ cup zucchini (diced)
½ cup bell peppers (diced)

1 tbsp lemon juice
Fresh parsley or coriander (chopped)
Directions
- Sauté Veggies: Heat oil in a pan. Add garlic, zucchini, and bell peppers. Cook for 3–4 minutes.
- Add Quinoa: Stir in quinoa, salt, and pepper.
- Finish: Turn off heat, add lemon juice and herbs.
