Lemon Coriander Soup

Ingredients
1 tbsp oil
1 tsp garlic, finely chopped
1 small onion, finely chopped
1 small carrot, finely chopped
¼ cup cabbage, shredded
4 cups vegetable stock
2 tbsp fresh coriander leaves, chopped
2 tbsp lemon juice
1 green chilli, slit
Salt & pepper to taste
Directions
- Heat oil in a pot, sauté garlic and onion until translucent.
- Add carrot and cabbage, stir-fry for 2 minutes.
- Pour in vegetable stock, bring to a boil.
- Add coriander, chilli, salt, and pepper. Simmer 10 minutes.
- Turn off the heat, stir in lemon juice.
- Serve hot with extra coriander garnish.
