Ingredients

  • 1 medium eggplant (cubed)

  • 1 tsp sesame or olive oil

  • 1 tsp garlic (minced)

  • 1 tsp soy sauce

  • ½ tsp chilli flakes or chilli paste

  • ¼ tsp sugar or maple syrup

  • 2 tbsp water

  • ½ tsp cornflour (optional, for glaze)

  • Spring onions (for garnish)

Directions

  • Sauté Eggplant: Heat oil in a pan. Add eggplant and cook till soft and golden.
  • Add Aromatics: Add garlic and chili; sauté briefly.
