A creamy South-Indian-inspired curry where eggs cook directly in silky coconut gravy.

Ingredients

  • Eggs – 4

  • Coconut milk – 1 cup

  • Onion – 1, chopped

  • Tomato – 1, chopped

  • Ginger-garlic paste – 1 tsp

  • Curry leaves – few

  • Mustard seeds – ½ tsp

  • Turmeric, red chilli, garam masala

  • Salt, oil

Directions

  • Heat oil; crackle mustard & curry leaves.
  • Sauté onion; add ginger-garlic & tomato.
  • Add spices; cook until a paste forms.
  • Pour coconut milk & simmer.
  • Crack eggs into curry, cover & cook until set.
