Boiled eggs simmered in a spiced onion-tomato curry. A hearty and protein-packed Indian comfort food.

Ingredients

  • 4 boiled eggs

  • 1 onion (finely chopped)

  • 1 tomato (pureed)

  • 1 tsp ginger garlic paste

  • 1/2 tsp turmeric, chilli powder, garam masala

  • Salt, coriander leaves

  • 2 tbsp oil

Directions

  • Sauté onions, ginger garlic paste, then add tomato puree.
  • Add spices and cook until the oil separates.
  • Add halved eggs, simmer 10 mins.
  • Garnish and serve with rice or roti.
