A refreshing, protein-rich salad made with crunchy cucumber and sprouted moong—light on the stomach and perfect for clean eating.

Ingredients

  • 1 cup moong sprouts (lightly steamed)

  • 1 cup cucumber (finely chopped)

  • 1 small tomato (chopped)

  • 1 tbsp onion (finely chopped, optional)

  • 1 tbsp roasted peanuts (crushed)

  • Salt to taste

  • ½ tsp black pepper powder

  • 1 tsp lemon juice

  • Fresh coriander leaves (chopped)

Directions

  • Prepare Sprouts: Lightly steam moong sprouts for 2–3 minutes and allow to cool.
  • Mix Vegetables: In a bowl, add cucumber, tomato, onion, and sprouts.
  • Season: Add salt, black pepper, and lemon juice.
  • Add Crunch: Sprinkle crushed peanuts and mix gently.
