Ingredients
- For Chole (Chickpea Curry):
1 cup dried chickpeas (kabuli chana), soaked overnight
2 onions (finely chopped)
2 tomatoes (pureed)
1 tbsp ginger-garlic paste
2 green chillies (slit)
1 bay leaf, 1 black cardamom
1 tsp cumin seeds
1/2 tsp turmeric
1 tsp coriander powder
1 tsp garam masala
1 tsp amchur (dry mango powder)
1 tbsp chole masala (optional)
Salt to taste
2 tbsp oil
Chopped coriander for garnish
- For Bhature:
2 cups all-purpose flour (maida)
2 tbsp semolina (rava)
1/4 cup yoghurt
1/2 tsp baking powder
Salt to taste
Warm water (for kneading)
Oil for deep frying
Directions
- Chole:
- Pressure cook soaked chickpeas with salt and a pinch of baking soda until soft.
- In a pan, heat oil, add cumin, bay leaf, and cardamom.
- Add onions, sauté till golden. Add ginger-garlic paste and cook.
- Add tomato puree and spices. Cook till oil separates.
- Add chickpeas and some cooking water. Simmer 10–15 minutes.
- Garnish with coriander.
- Bhature:
- Mix flour, semolina, salt, baking powder, and yoghurt.
- Knead into a soft dough using warm water. Cover and rest 2–3 hours.
- Divide dough, roll into medium circles.
- Deep-fry until golden and puffed.
