Ingredients
4 bread slices (white or whole wheat)
½ cup grated cheese (mozzarella or processed)
2 tbsp sweet corn (boiled)
2 tbsp carrot (finely grated)
1 tbsp capsicum (very finely chopped)
Salt to taste
¼ tsp black pepper (optional)
Butter for spreading
Directions
- Prepare Filling: In a bowl, mix grated cheese, corn, carrot, capsicum, salt, and black pepper.
- Butter the Bread: Spread butter evenly on one side of each bread slice.
- Assemble Sandwich: Spread the veggie-cheese mixture on the unbuttered side of two slices. Cover with remaining slices, buttered side facing out.
- Toast the Sandwich: Toast on a pan or sandwich maker until golden and cheese melts.
- Slice & Serve: Cut into triangles or fun shapes and serve warm.
