Ingredients
2 medium carrots (chopped)
¼ cup red lentils (masoor dal, washed)
1 tsp olive oil
1 small onion (chopped)
1 clove garlic (minced)
½ tsp cumin powder
¼ tsp black pepper
Salt to taste
2½ cups water or vegetable stock
Fresh parsley or coriander (for garnish)
Directions
- Sauté Base: Heat olive oil in a pot. Add onion and garlic, sauté until soft.
- Add Vegetables & Dal: Add carrots and lentils. Stir well.
- Season: Add cumin powder, pepper, and salt.
- Simmer: Add water or stock and cook for 15–18 minutes until carrots and lentils are soft.
- Blend (Optional): Lightly blend for a smooth texture or serve chunky.
- Serve: Garnish and enjoy warm.
