Ingredients
- For Roti
2 whole wheat instant rotis (or parathas)
Butter or oil for roasting
- For Veg Filling
1 cup boiled potatoes (mashed)
½ cup mixed vegetables (carrot, beans, peas – finely chopped)
1 onion (finely chopped)
1 green chili (finely chopped)
1 tsp ginger-garlic paste
½ tsp turmeric powder
1 tsp pav bhaji masala
½ tsp red chilli powder
Salt to taste
1 tbsp oil
Fresh coriander leaves
- For Assembly
Green chutney
Tomato ketchup
Chaat masala
Lemon juice
Directions
- Prepare the Filling: Heat oil in a pan, add onions and sauté till soft. Add ginger-garlic paste and green chilli; sauté well.
- Add Vegetables & Spices: Add boiled potatoes, mixed vegetables, turmeric, red chilli powder, pav bhaji masala, and salt. Mix well and cook for 3–4 minutes. Add coriander and switch off heat.
- Roast the Rotis: Heat a tawa, apply butter/oil on rotis, and roast lightly on both sides.
- Assemble the Frankie: Place roti on a flat surface. Spread green chutney and ketchup. Add prepared vegetable filling in the center.
- Season & Roll: Sprinkle chaat masala and a few drops of lemon juice. Roll tightly and serve hot.
