Smoky roasted eggplant mashed and cooked with onions, tomatoes, and Indian spices. A rustic Punjabi favourite.

Ingredients

  • 1 large eggplant (roasted)

  • 1 tbsp oil

  • 1 onion (chopped)

  • 1 tomato (chopped)

  • 1 green chilli (chopped)

  • 1 tsp ginger garlic paste

  • 1/2 tsp turmeric, red chilli powder, garam masala

  • Salt and coriander leaves

Directions

  • Roast eggplant on an open flame or oven. Peel and mash.
  • Sauté onions, ginger, garlic, then tomatoes.
  • Add spices and mashed eggplant. Mix and cook for 10 mins.
  • Garnish and serve with roti.
