Ingredients
1 large eggplant (roasted)
1 tbsp oil
1 onion (chopped)
1 tomato (chopped)
1 green chilli (chopped)
1 tsp ginger garlic paste
1/2 tsp turmeric, red chilli powder, garam masala
Salt and coriander leaves
Directions
- Roast eggplant on an open flame or oven. Peel and mash.
- Sauté onions, ginger, garlic, then tomatoes.
- Add spices and mashed eggplant. Mix and cook for 10 mins.
- Garnish and serve with roti.
