A quick and wholesome sauté made with tender zucchini and protein-rich chickpeas—light, flavorful, and perfect for a healthy meal.

Ingredients

  • 1 medium zucchini (sliced)

  • ¾ cup cooked chickpeas

  • 1 tsp olive oil

  • 1 clove garlic (minced)

  • ½ tsp dried oregano

  • ¼ tsp black pepper

  • Salt to taste

  • Lemon juice (optional)

  • Fresh parsley (for garnish)

Directions

  • Heat Oil: Heat olive oil in a pan. Add garlic and sauté briefly.
  • Add Zucchini: Add zucchini slices and sauté for 4–5 minutes until tender.
  • Add Chickpeas: Add chickpeas, oregano, pepper, and salt. Toss gently.
  • Stir-Fry: Cook for 4–5 minutes until lightly golden.
  • Finish & Serve: Add a squeeze of lemon, garnish with parsley, and serve warm.
