A warm, nourishing soup made with carrots and red lentils—light on the stomach, rich in fiber and plant protein.

Ingredients

  • 2 medium carrots (chopped)

  • ¼ cup red lentils (masoor dal, washed)

  • 1 tsp olive oil

  • 1 small onion (chopped)

  • 1 clove garlic (minced)

  • ½ tsp cumin powder

  • ¼ tsp black pepper

  • Salt to taste

  • 2½ cups water or vegetable stock

  • Fresh parsley or coriander (for garnish)

Directions

  • Sauté Base: Heat olive oil in a pot. Add onion and garlic, sauté until soft.
  • Add Vegetables & Dal: Add carrots and lentils. Stir well.
  • Season: Add cumin powder, pepper, and salt.
  • Simmer: Add water or stock and cook for 15–18 minutes until carrots and lentils are soft.
  • Blend (Optional): Lightly blend for a smooth texture or serve chunky.
  • Serve: Garnish and enjoy warm.
