Ingredients
2 medium sweet potatoes (cubed)
¼ cup roasted peanuts
2 tbsp oil
½ tsp mustard seeds
½ tsp cumin seeds
1 small onion (finely chopped)
1 green chilli (finely chopped, optional)
¼ tsp turmeric powder
½ tsp red chilli powder
Salt to taste
Curry leaves (optional)
Fresh coriander (for garnish)
Lemon juice (optional)
Directions
- Cook Sweet Potatoes: Boil or steam sweet potato cubes until just tender. Drain and set aside.
- Prepare Tempering: Heat oil in a pan. Add mustard seeds, cumin seeds, and curry leaves.
- Sauté Base: Add onion and green chilli. Sauté until soft.
- Add Spices: Add turmeric, red chilli powder, and salt. Mix well.
- Combine: Add cooked sweet potatoes and peanuts. Toss gently.
- Stir-Fry: Cook on medium flame for 5–7 minutes until lightly crisp.
- Finish & Serve: Garnish with coriander and a squeeze of lemon.
