A traditional South Indian Pongal delicacy made with roasted sesame seeds and jaggery—nutritious, energy-rich, and symbolizing prosperity.

Ingredients

  • 1 cup black sesame seeds (ellu)

  • ¾ cup jaggery (powdered)

  • 2 tbsp water

  • ¼ tsp cardamom powder

  • 1 tsp ghee (for greasing hands)

Directions

  • Roast Sesame Seeds: Dry roast sesame seeds on low flame until they crackle and release aroma. Cool slightly.
  • Grind: Grind the roasted sesame seeds coarsely (do not make a fine powder).
  • Prepare Jaggery Syrup: Heat jaggery with water until it melts and reaches a soft ball consistency.
  • Combine: Add ground sesame seeds and cardamom powder to the jaggery syrup. Mix well.
  • Shape Ladoos: While the mixture is warm, grease hands with ghee and shape into round ladoos.
  • Cool & Serve: Allow to cool completely before serving.
