Crispy outside and soft inside, these paneer veggie nuggets are packed with hidden vegetables—perfect as a healthy snack kids will love.

Ingredients

  • 1 cup paneer (grated)

  • ¼ cup boiled potato (mashed)

  • ¼ cup carrot (grated, squeezed)

  • 2 tbsp sweet corn (boiled & mashed)

  • 2 tbsp bread crumbs (plus extra for coating)

  • ¼ tsp black pepper

  • Salt to taste

  • 1 tsp butter or oil

  • 2 tbsp cornflour

  • Water (for slurry)

Directions

  • Prepare Mixture: In a bowl, mix paneer, potato, carrot, sweet corn, bread crumbs, pepper, and salt.
  • Shape Nuggets: Shape the mixture into small nugget or oval shapes.
  • Coat: Mix cornflour with water to make a thin slurry. Dip nuggets in slurry and roll in bread crumbs.
  • Cook: Shallow fry on a pan with little oil until golden on all sides (or air fry at 180°C for 12–15 minutes).
  • Serve: Serve warm with tomato ketchup or cheese dip.
