Vegetable Oats Upma

Ingredients
1 cup rolled oats
1 tbsp oil
½ tsp mustard seeds
½ tsp cumin seeds
8–10 curry leaves
1 small onion (finely chopped)
1 green chilli (finely chopped, optional)
¼ cup carrot (finely chopped)
¼ cup green peas
¼ cup beans (chopped)
¼ tsp turmeric powder
Salt to taste
2 cups water
Fresh coriander leaves (for garnish)
Lemon juice (optional)
Directions
- Dry Roast Oats: Dry roast oats on low flame until aromatic. Remove and set aside.
- Prepare Tempering: Heat oil in a pan. Add mustard seeds, cumin seeds, and curry leaves.
- Sauté Vegetables: Add onion and green chilli. Sauté until soft. Add vegetables, turmeric, and salt. Cook for 2–3 minutes.
- Cook Upma: Add water and bring to a boil. Add roasted oats and mix well.
- Simmer: Cook on low flame, stirring occasionally, until oats absorb water.
- Serve: Garnish with coriander and a squeeze of lemon. Serve hot.
