Ingredients
1 cup semolina (rava/sooji)
2½ cups water
2 tbsp oil or ghee
½ tsp mustard seeds
½ tsp cumin seeds
1 tsp chana dal
1 tsp urad dal
1 green chilli (finely chopped)
1-inch ginger (finely chopped)
Curry leaves
½ cup mixed vegetables (carrot, beans, peas)
Salt to taste
1 tbsp lemon juice
Fresh coriander leaves
Directions
- Roast the Rava: Dry roast rava on low flame until aromatic. Remove and keep aside.
- Prepare Tempering: Heat oil/ghee in a pan. Add mustard seeds, cumin seeds, chana dal, and urad dal. Fry until golden.
- Add Aromatics: Add green chilli, ginger, and curry leaves. Sauté briefly.
- Cook Vegetables: Add mixed vegetables and sauté for 2–3 minutes. Add water and salt; bring to a boil.
- Add Rava: Lower flame and slowly add roasted rava while stirring continuously.
- Cook: Cover and cook for 3–4 minutes until rava absorbs water.
- Finish: Add lemon juice and mix gently. Garnish with coriander and serve hot.
