A light, fluffy, and nutritious flattened rice dish tossed with vegetables and mild spices—quick and comforting.

Ingredients

  • 1½ cups thick poha (flattened rice)

  • 1 onion (finely chopped)

  • 1 small potato (finely chopped)

  • 2 tbsp peanuts

  • 1 green chilli (chopped)

  • ½ tsp mustard seeds

  • ½ tsp turmeric powder

  • Curry leaves

  • 1 tbsp oil

  • Salt to taste

  • Lemon juice to taste

  • Fresh coriander leaves

Directions

  • Rinse poha under water and drain completely.
  • Heat oil in a pan, add mustard seeds and let them crackle.
  • Add peanuts and roast till crunchy.
  • Add onions, green chili, curry leaves, and potatoes. Sauté well.
  • Add turmeric and salt, mix well.
  • Add softened poha and gently mix everything.
  • Cover and cook on low flame for 5 minutes.
  • Finish with lemon juice and coriander.
  • Serve hot.
