kcalA bold and spicy North Indian vegetable curry made with freshly ground kadai masala and crunchy bell peppers.
Ingredients
1 cup mixed vegetables (carrot, beans, peas)
1 cup capsicum (cubed)
2 onions (sliced)
2 tomatoes (pureed)
1 tbsp ginger-garlic paste
2 tbsp oil
1 tsp cumin seeds
2 tsp kadai masala
½ tsp turmeric powder
1 tsp red chilli powder
Salt to taste
Fresh coriander for garnish
Directions
- Heat oil in a pan and add cumin seeds.
- Add onions and sauté till golden.
- Add ginger-garlic paste and sauté well.
- Add tomato puree, turmeric, chilli powder, and salt.
- Cook until oil separates.
- Add vegetables and capsicum with a little water.
- Cover and cook till veggies are tender.
- Add kadai masala, mix well, and simmer 5 minutes.
- Garnish with coriander and serve hot.
