A spicy, aromatic South Indian-style chicken fry loaded with crushed black pepper and earthy spices.

Ingredients

  • 400g chicken (boneless or with bone)

  • 1 onion, sliced

  • 1 tsp crushed pepper

  • 1 tsp ginger-garlic paste

  • ½ tsp turmeric

  • 1 tsp coriander powder

  • 1 tsp cumin powder

  • ½ tsp garam masala

  • Curry leaves

  • Salt & oil

Directions

  • Heat oil and sauté onions & curry leaves.
  • Add ginger-garlic paste and cook.
  • Add chicken, spices, and salt.
  • Cook covered until the chicken softens.
  • Add crushed pepper and sauté on high for 3–4 minutes.
  • Serve hot with rice or chapati.
